Creamy Parmesan Chicken Single Serve

And here's another yummy recipe!

I tasted another recipe I have to share! This is the recipe that won 2nd place at Thrive's Leadership Academy when consultants were given a bunch of Thrive ingredients and told to compete with each other to make the best dish! My friend Shelli Rasmussen had been working on this recipe using the March Specials and decided to make it, and it was DELICIOUS!

CREAMY PARMESAN CHICKEN
-Single Serve Portion-

·    1/2 cup FD Grilled Seasoned Chicken
·    1 TBSP FD Spinach
·    1/4 cup FD Mushrooms
·    1/8 tsp garlic powder
·    1 TBSP Veloute Sauce Mix (Chicken Gravy)
·    1 TBSP Bechamel Sauce Mix (White Sauce)
·    1 TBSP or more of FD Parmesan Cheese
·    1/8 tsp Chef's Choice Seasoning

Put all ingredients in a small jar or baggie (quart freezer bags work well) until you are ready to use it. Pour into a bowl and add 3/4 - 1 cup of hot water and stir until creamy. Let it sit for 2-3 minutes, stir again, and serve over rice, potatoes, cauliflower rice, toast, etc. Or eat just like it is! Easy, quick lunch on the go!

You can also saute it in a pan for a few minutes to heat it up and let the flavors develop better.

In the picture, I used Seasoned Chicken Slices, which are larger pieces than the Grilled Seasoned Chicken. The bigger pieces have to refresh longer. I actually prefer the thinner slices of the Grilled Seasoned Chicken that's on sale in March (just a few more days!) They refresh quicker and are really good. Also, I didn't want it as saucy or salty, so I only added about half of the sauce mixes in the recipe. Feel free to add peas or other vegetables. Such an easy recipe to customize to your liking!

I have not made this into a jar meal yet, but if you 4 times the recipe, it might be about the right amount for a quart jar.

Here is a quick pic I took of the finished product for the contest and the recipe we scribbled down (after we had eaten some of it.) Very saucy and delicious!

    I love reading your blog. As someone who is into healthy foods, your recipes on food storage items are very helpful to me because they are easy to follow.
