The Red Peppers Surprised Me and Changed My Mind!

Ok, I must admit that I was pleasantly surprised by these Freeze Dried Red Bell Peppers! 

DID YOU KNOW:

• 1/4 cup of FD Red Peppers contains 130% of the daily Vitamin C you need in your diet??!! THAT'S ONLY ONE FOURTH OF A CUP! Plus 40% of your daily Vitamin A, and 2% of Iron! Wow! 

• They taste good enough to eat them as a snack right out of the can! They are sweet and tangy! The 20-month-old I keep every day eats them like candy! She loves them!! What a healthy snack for her!

Sweet Pepper Dip by Chef Todd Leonard, CEC Prep time: 40 min. Serves 10
Ingredients		Instructions
1 c. THRIVE™ Sour Cream Powder + ½ c. cold water 2 tbsp. olive oil 2 c. THRIVE™ Red Bell Peppers (FD) ¼ c. water 2 tsp. THRIVE™ White Sugar		Mix sour cream and olive oil in a bowl. Blend peppers into a powder in a food processor or blender. Add water to bell pepper powder and mix until powder is moistened. Add red pepper mixture to sour cream mixture. Add sugar and mix thoroughly. Refrigerate for 30 minutes or until thickened. Makes a tasty dip for veggies!
