The Red Peppers Surprised Me and Changed My Mind!

Ok, I must admit that I was pleasantly surprised by these Freeze Dried Red Bell Peppers! 


  • 1/4 cup of FD Red Peppers contains 130% of the daily Vitamin C you need in your diet??!! THAT'S ONLY ONE FOURTH OF A CUP! Plus 40% of your daily Vitamin A, and 2% of Iron! Wow! 
  • They taste good enough to eat them as a snack right out of the can! They are sweet and tangy! The 20-month-old I keep every day eats them like candy! She loves them!! What a healthy snack for her!
  • They are not little dices like I thought they would be! They come in long strips (about 1/2 - 2 inches long). Some are smaller pieces than that, but they definitely are not little bits like most of the dehydrated peppers I have tried. 
  • You can use them in any recipe that you normally would use red bell peppers! Fajitas, stir fries, Cowboy Caviar, etc.
  • I'm totally sold on these! I thought "food storage" peppers had to be small, shriveled up bits that you could only use when cooking chili! These are fabulous and can be used like fresh peppers!!

Sweet Pepper Dip

Prep time: 40 min.
Serves 10
1c. THRIVE™ Sour Cream Powder + ½ c. cold water
2tbsp. olive oil
2c. THRIVE™ Red Bell Peppers (FD)
¼c. water
2tsp. THRIVE™ White Sugar
Mix sour cream and olive oil in a bowl. Blend peppers into a powder in a food processor or blender. Add water to bell pepper powder and mix until powder is moistened. Add red pepper mixture to sour cream mixture. Add sugar and mix thoroughly. Refrigerate for 30 minutes or until thickened. Makes a tasty dip for veggies!
